Hi Joe Gomez thank you for reaching out! Those values highlighted in the red box are being pulled from the Metafields enabled in the slideout. If you scroll down a bit, you'll see Color, Denominations etc.
Currently, your Product Tags configuration is set up to use all Product Tags. If you want to select specific Product Tags to be enabled, select the Specific option and enter in the specific Product Tags you want to configure for Filters.
